Coconut Water Kefir

 

Notes: We recommend that you do not use your grains to make coconut water kefir until they have balanced and become accustomed to being in your home. Coconut water as does most fruit juice tends to be hard on water kefir grains over time so we recommend that you use your extra grains and keep a mother colony fermenting in sugar water.

Recipe:

4 cups young coconut water

4 tablespoons water kefir grains

Combine the coconut water and the grains in a jar and let it sit for 12 to 24 hours. Some people like to add a tablespoon of sugar to help feed their grains but this is optional. Coconut water tends to ferment quickly and the flavor will become more intense (sour and tangy) as the ferment comes to an end. We recommend that you taste test it periodically. When you like the flavor just strain the grains out and enjoy your healthy, probiotic enriched tropical beverage!
